Flourless Peanut Butter Cookies

Here is a moist, flavorful and chewy peanut butter cookie recipe made without flour and just 4 ingredients (peanut butter, sugar, egg and vanilla). Adding dark chocolate chips makes them even better.  I swooned a little the first time I tasted these cookies because they taste amazing and I felt like I was eating the old fashioned, fully loaded peanut butter cookies that I loved from childhood.  I’ve gotten in the habit of making a double batch divided into two –  one half without chocolate, and the other half with dark chocolate chips. These cookies don’t last long in my house. Try them the next morning with a cup of coffee. Flourless Peanut Butter Cookies come together in a snap, look pretty when finished and are also fun for new or young bakers.

Flourless Peanut Butter Cookies

Four ingredients make moist, chewy delicious peanut butter cookies, all without using any flour.

Ingredients

  • 1 cup peanut butter or almond butter is delicious too
  • 1/2 cup sugar
  • 1 egg, whipped
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350 degrees. 

  2. Line a cookie sheet with parchment paper, or a non stick baking liner, or spray lightly with cooking spray. 

  3. Lightly whip egg. 

  4. Mix all ingredients together in a large bowl. 

  5. Your cookie dough should be sticky and not runny. 

  6. Roll cookie dough into balls about the size of a walnut shell and place approximately 3 inches apart on your cookie sheet. Using the tines of a fork, press balls slightly flat, making a crosshatch pattern on each one. 

  7. Bake for approximately 10 minutes. These cookies will expand just slightly during cooking and will turn a shade darker than the uncooked dough. 

Recipe Notes

For Peanut Butter Chocolate Chip Cookies: 

Add 1/3 Cup dark chocolate chips to dough.
