Creamy Slow Cooker Chicken Chili

Chili, in all its varieties is one of the easiest and most economical meals around. It’s nutritious, feeds a crowd and best of all, super compatible with a crock pot or slow cooker. My only complaint about most chilis, chicken chili in particular, is that as a meal it tends to be extremely low in fat. Creamy Slow Cooker Chicken Chili is the solution.

Wait, what? Not enough fat??

Right now you might be asking yourself if I’ve gone crazy. How could I be complaining about a low fat meal? It’s just that in my experience in losing 90 pounds, I’ve learned that a small amount of fat along with fiber, protein and complex carbs in meals gives me a much greater sense of satiation. And when I feel satiated I eat less and am more satisfied for more hours. Enter Creamy Slow Cooker Chicken Chili.

This meal assembles in about 10 minutes. Then the slow cooker works its magic for the next 6-8 hours. Come home from work or a busy weeknight and serve your family and friends a tasty, healthy meal. Just a few ingredients…

Hominy hominy hominy – such a fun word to twirl around the mouth. It’s a little verbal workout. But hominy also happens to taste great too, and has a pleasing, chewy texture. It’s the recipe substitute of choice for this woman, married to the same man for 22 years, a man who doesn’t like corn. Who doesn’t like corn?? My guy! But guess what – hominy IS corn!

When it’s on sale, I buy a few cans of hominy at a time. It’s great to have on hand, especially for slow cooker recipes. And after 6-8 hours of cooking, hominy retains its chewy texture.

Creamy Slow Cooker Chicken Chili is delicious by itself, with brown rice, tortilla chips, or my personal favorite, saltine crackers. You can also top it off with avocado, sharp cheddar cheese and a couple of slices of fresh jalapeno.

Creamy Slow Cooker Chicken Chili

Creamy, easy, satisfying chicken chili cooked up in the slow cooker. Make this for a weeknight dinner, tailgate party or your next potluck. This chili goes great with rice, cornbread, saltine crackers or chips.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 15.5 oz can black beans in chili sauce
  • 1 14.5 oz can petite diced tomatoes
  • 1 15 oz can white hominy, rinsed and drained frozen or canned corn can be substituted
  • 1/2 medium sized onion, diced very small
  • 1 1 oz package of powdered ranch dressing mix
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 6 oz cream cheese

Toppings

  • shredded cheese, sliced jalapeños, chopped fresh cilantro, avacado

Instructions

  1. Spray the stoneware crock with cooking spray. Lay the chicken breasts in the bottom of the crock. Next, layer in the black beans in chili sauce, petite diced tomatoes and drained hominy. Add in the diced onion. 

  2. In a small bowl mix the dried ingredients of ranch dressing mix, chili powder and cumin together. Add this mixture to the crock. 

  3. Stir wet and dried ingredients in the crock together. Add the cream cheese to top of the mixture in the crock.  

  4. Cover with the lid and cook on low for 6-8 hours. 

  5. Remove the chicken from the chili and shred with two forks. Add the chicken back to the pot and stir well. 

  6. Serve hot with toppings of your choice. Cornbread, rice, saltine crackers and tortilla or corn chips all go great with this chili.
