Four ingredients make moist, chewy delicious peanut butter cookies, all without using any flour.
Preheat oven to 350 degrees.
Line a cookie sheet with parchment paper, or a non stick baking liner, or spray lightly with cooking spray.
Lightly whip egg.
Mix all ingredients together in a large bowl.
Your cookie dough should be sticky and not runny.
Roll cookie dough into balls about the size of a walnut shell and place approximately 3 inches apart on your cookie sheet. Using the tines of a fork, press balls slightly flat, making a crosshatch pattern on each one.
Bake for approximately 10 minutes. These cookies will expand just slightly during cooking and will turn a shade darker than the uncooked dough.
For Peanut Butter Chocolate Chip Cookies:
Add 1/3 Cup dark chocolate chips to dough.
