Easiest Slow Cooker Beef Pot Roast

Recently, my kitchen looked like this:

Painting walls is a project that I actually enjoy undertaking. But painting cabinets is an entirely different kettle of fish. We decided to save up and hire professionals for the cabinets. I am so glad! Professional painters arrive like genies, wave their magic sprayers, and viola! New kitchen! There is no mess and no lingering little touch-up spots (touch-ups that I would’ve never completed).

I knew in advance that my kitchen would be unavailable for about a week and therefore planned simple meals. Fortunately, we still had access to electricity and plumbing. This allowed me the use of the slow cooker, rice cooker and toaster. Turns out that our laundry sink doubled as a kitchen sink really well. And raw veggies went great with every meal.

Enter the Easiest Slow Cooker Beef Pot Roast recipe. Best recipe ever!  I make this recipe even when my kitchen isn’t cocooned in reams plastic and miles tape. It tastes just as good as pot roast recipes that I’ve spent much more energy on. And the meat comes out super moist. Ordinarily, I prefer to make my own rubs from scratch and add loads of veggies to pot roasts. But this is a case where simplicity along with store-bought seasoning packets create poetry in the crock pot.

Make sure that the meat you select has a nice amount of fat marbling. If your meat is too lean, the crock pot can dry it out. The roast in this photo is approximately 2.7 pounds and had the perfect amount of fat to meat ratio.

Give your crock a quick coating of cooking spray.

Mix together the seasoning packets.

Coat the meat with the combined seasonings.

Place the roast in the slow cooker, adding any remaining seasoning and then drizzle with water. Put the lid on and set your timer.

Shred the cooked meat with a fork and serve. (I had planned for this meal to be worth two nights of dinners, but it tasted so good that my family ended up eating almost all of it on the first night!)

Easiest Slow Cooker Beef Pot Roast

This Beef Pot Roast is one of the easiest things you can make in your slow cooker. Mix together 3 seasoning packets, coat the beef, add water and cook. At the end of the day, you will be presented with juicy, flavorful and moist beef to adorn your dinner plate. And at around $2.50 per serving, this is an inexpensive main course.

Ingredients

  • 2-3 pounds beef chuck roast, boneless
  • 1 .87 oz packet brown gravy mix
  • 1 1 oz. packet ranch dressing mix
  • 1 .7 oz packet Italian dressing mix
  • 1/4 cup water

Instructions

  1. Spray the inside of the crock with cooking spray.

  2. Combine the brown gravy mix, ranch dressing mix and Italian dressing mix in a small bowl. 

  3. Coat both sides of the meat with the mixed powders and place into the crock.

  4. Drizzle water over the meat. Cover with the lid.

  5. Cook on low for 8 hours or high for 6. 

  6. To serve, shred meat with a fork. 

Recipe Notes

I recommend that you do not add salt or pepper to this meal until it's on your plate, and you've had a chance to taste-test it. The powdered mixes have a lot of salt in them.
