Herb and Butter Salmon

Savory, buttery and lemony with garlic, basil and dill, this easy salmon recipe is short on prep time and big on taste. Make it for company, date night or a weeknight dinner. My teenagers devoured this!

Ingredients

  • 1 pound Salmon Fillets, with skin Approximately 4 oz. per serving
  • 2-3 tbsp Butter
  • 2 tbsp Fresh Basil, chopped Or 2 tsp dried basil
  • 2 Lemons, juiced
  • 2 tbsp Lemon zest
  • 2 tsp Fresh Dill Or 1 tsp dried dill
  • 1 tsp Garlic, finely minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425 F degrees. Line a baking sheet with parchment paper. Place salmon on the parchment paper, skin side down. Using paper towels, pat the salmon fillets to dry them off. Give the fillets a very light sprinkle of salt and pepper. 

  2. Melt the butter and add in the basil, lemon juice, lemon zest, dill and garlic.  

  3. Pour the butter mixture over the fillets.

  4. Roast the fillets for approximately 5 to 7 minutes per half inch of thickness. Keep an eye on the fillets because salmon cooks fast. Salmon turns light pink  and flaky when done. 

  5. Turn oven temp to Broil and broil salmon for 1 to 2 minutes to caramelize and roast the garlic in the sauce. 

  6. Serve immediately. Garnish with sliced lemon.
