Roasted Green Beans and Mushrooms

If you’ve never tried roasted green beans, you’re in for a treat with this recipe. Green beans are a versatile vegetable. Roasting them with mushrooms adds a rich and delightful layer of flavor and texture. This is a dish that you can quickly mix together and throw in the oven to roast while you prepare the rest of your meal.

It’s as easy as mixing up a salad. Add everything to a bowl and drizzle with olive oil.

Spread it all out on a cookie sheet lined with parchment paper and pop it in the oven.

When it’s time to serve, sprinkle with fresh parmesan cheese.

Roasted Green Beans and Mushrooms

Bright green beans and savory mushrooms roasted in olive oil and garlic are a delicious combination. Make these for a weeknight meal or add them to your holiday table.

Ingredients

  • 3 cups fresh green beans
  • 2 cups fresh mushrooms, sliced
  • 1/4 cup olive oil
  • 1 clove garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp grated parmesan for garnish

Instructions

  1. Preheat oven to 400 degrees. Prepare a baking sheet with parchment paper. 

  2. Wash green beans snap off stem ends. Break each green bean into 2 to 4 bite-sized pieces. 

  3. In a large mixing bowl, combine green beans, sliced mushrooms, olive oil, minced garlic, salt and pepper. Mix together until the vegetables are evenly coated in oil and spices. 

  4. Spread vegetables evenly on the parchment paper lined baking sheet. 

  5. Roast for approximately 20 minutes for crisp, firm green beans. Or add approximately 5-10 minutes more of roasting time if you like slightly softer green beans. 

  6. Allow to cool for 5 minutes. Serve with finely shredded parmesan cheese sprinkled on top.
