Simple Goodness
Today I’m sharing one of my quick and easy go-to breakfasts. This is a breakfast that I love all the time, in any season, no matter what is going on in my life. Almond Butter and Banana Toast has been especially great this week because I don’t have the energy to cook. It can be assembled in about 3 minutes. It’s really just a matter of how long it takes for your toaster to toast!

Paying Attention to Calories
I’ve been laser focused on calories this week because my leg is in an aircast and I have a sloppy, wet, head-cold. Pre-cold, during my first few days in the cast, I experimented at the gym, learning which machines and exercises were possible. It turns out that I could do quite a bit, even with one leg/foot out of commission. Things were looking up. But then the cold took root and I’ve been four days at home, immobilized, froggy voiced, red nosed, runny eyed, mouth breathing with zero energy. Sick and immobile is the perfect set of conditions for me to gain weight.
And yet, there are still blessings to count. 1. Almond Butter and Banana Toast is healthy, easy, and tasty. I usually have the ingredients on hand to make it. 2. My doctor wanted to give me a plaster cast. Aaaackk! But I promised (wheedled and begged) to be diligent with the aircast. 3. I can still drive, shower and sleep like “normal”. Hallelujah!
Food Temptations
It’s tempting to eat whatever comes my way right now. I have three teenagers. They love sweet anything. A few favorites are Bubble tea, milkshakes disguised as coffee, burgers and fries, chow mein noodles shiny and oily, chicken nuggets that barely qualify as chicken and food wrapped in fluffy white tortillas. As I’m driving around in the world seeing this bounty of available calories, I try to imagine flashing “DANGER” signs above my food temptations.
Enter the Good Stuff
In all fairness to my kids, they also have a taste for healthy foods too. They eat eggs, spinach, Brussel sprouts, quinoa, brown rice, dark chocolate, salmon and more. I am always working to maintain a state of food equilibrium in which there is occasional junk balanced with wholesomeness. The other day I called the kids downstairs for a breakfast of greek yogurt and granola parfaits. My oldest daughter asked quietly, “But are there pumpkin seeds?” How did she know??? I had hidden the box of granola to avoid any unnecessary teen scrutiny. They’re always suspicious that I might slip healthy ingredients into their meals. My kids still talk about the green zucchini pancakes that I made (they tasted AWESOME!) when they were in elementary school. But Almond butter and Banana toast is accepted by all in my house.
I love almond butter! I buy a variety of brands, depending on what’s on sale. Almond butter is expensive. Use it well. And don’t be lazy like me with the stirring. Full Circle Almond Butter requires stirring to integrate the oils back into the almonds. If you don’t stir thoroughly, your first servings will be oily. And the servings from the bottom of the jar will be a tad dry.
When I’m feeling better, I plan on a Costco trip to buy bulk almonds. Then I’ll roast and grind them into almond butter using my food processor. I’ll let you know how that turns out.
Don’t Be Afraid of Sprouted Bread
Sprouted bread is leagues better than the other stuff. The difference is in the ingredients. It has more protein, fiber and nutrients. Because of this it has a lower glycemic index, compared to bread made with processed ingredients of bleached and refined flours. This means that it doesn’t spike my blood sugar in the way that simple and refined carbs do. I’ve found that Sprouted Bread keeps me satisfied for longer. Plus I enjoy the taste and textures that sprouted bread offers. It is the perfect foundation for Almond Butter and Banana Toast.

Almond Butter and Banana Toast
Quick, easy and nutritious toast with a satisfying blend of calories to start your day off right.
Ingredients
- 1 slice sprouted grain bread
- 1/2 banana, sliced
- 2 tbsp almond butter peanut butter is a fine alternative
- 2 tbsp blueberries
- 1 tsp chia seeds
Instructions

Toast the bread to your desired level of doneness. Approximately 2-4 minutes

Spread almond butter on toasted bread. Layer with bananas and blueberries. Sprinkle with chia seeds. Eat immediately. Enjoy!
